Light up the greenery....I mean spinach.

Well, we've all heard that light breaks down the vitamins in milk, and that's why some brands have started using opaque plastic containers.  But what about our vegetables?  I mean, they grow on sunshine, right?

Apparently somebody else asked the same question, and so tested spinach vs. a flourescent light.  Overall, the spinach was more nutritious AFTER the light exposure.  Not entirely surprising, since people have been growing lettuce and spinach with different types of artificial light without issue for quite a while.  So eat some spinach.
